Grasshopper Poutine, Cricket Gravy, Squeaky Cheese Curds

I brought home some cheese curds during my visit to Madison, and the first thing I made was this poutine. The best time to enjoy the curds is when they are still squeaky as you chew them, and they lose this quality rather quickly over time. 

The poutine made me remember my time in Quebec and made me feel nostalgic for both my time and friends there. I thought I would’ve returned there by now but it’s always difficult to find funding, and it makes me all the more appreciative of all the touring I’ve been able to do thus far. 

The cheese curds weren’t super squeaky, but I enjoyed them nonetheless with this delectable dish. The gravy was made with a cricket stock I’ve been implementing increasingly more in my home cooking, and I finished it off with grasshoppers.
